Ingredients

  • 6 medium Apples (Granny Smith or Honeycrisp)
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 3 tablespoons Granulated erythritol (or other low-calorie sweetener)
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Fresh lemon juice
  • 1 tablespoon Cornstarch
  • 3 tablespoons Unsweetened applesauce
  • 1 9-inch Low-calorie pie crust
  • 1 large Egg white
  • 1 tablespoon Water

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel, core, and thinly slice the apples. Place them in a large mixing bowl.

Step 3

Add ground cinnamon, ground nutmeg, granulated erythritol, vanilla extract, fresh lemon juice, cornstarch, and unsweetened applesauce to the apples. Toss until the apple slices are evenly coated.

Step 4

Place the low-calorie pie crust into a 9-inch pie pan, gently pressing it into the dish.

Step 5

Pour the apple mixture into the pie crust, spreading it evenly.

Step 6

In a small bowl, whisk the egg white with water to make an egg wash.

Step 7

Brush the edges of the pie crust with the egg wash to help it achieve a golden color during baking.

Step 8

Optionally, cut decorative strips or shapes from another pie crust sheet and place them on top of the pie for decoration. Brush these with egg wash as well.

Step 9

Place the pie in the preheated oven and bake for 40 minutes, or until the filling is bubbly and the crust is golden brown.

Step 10

Allow the pie to cool for at least 20 minutes before slicing to let the filling set.

Step 11

Serve warm or at room temperature and enjoy your lighter, delicious apple pie!
