Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 2 large Sweet potatoes
  • 3 tablespoons Olive oil
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 cup Pineapple chunks
  • 1 medium, diced Red bell pepper
  • 0.5 medium, finely chopped Red onion
  • 2 tablespoons, chopped Cilantro
  • 2 tablespoons Lime juice
  • 1 teaspoon Honey
  • 0.5 teaspoon Chili powder

Directions

Step 1

Preheat your grill to medium heat (about 375–400°F).

Step 2

Peel and slice the sweet potatoes into 1/2-inch thick rounds. Brush them with 1 tablespoon of olive oil and sprinkle with 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1/2 teaspoon of paprika. Set aside.

Step 3

In a small bowl, combine garlic powder, 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1/2 teaspoon of paprika, and chili powder. Rub this spice mixture evenly over the chicken breasts.

Step 4

Prepare the pineapple salsa: In a medium bowl, combine pineapple chunks, diced red bell pepper, red onion, cilantro, lime juice, and honey. Mix well and refrigerate until ready to serve.

Step 5

Brush the grill grates with oil to prevent sticking. Place the sweet potato rounds on the grill and cook for 4–5 minutes per side, or until tender and grill marks appear. Remove and keep warm.

Step 6

Place the chicken breasts on the grill and cook for 6–7 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove from the grill and let rest for 5 minutes.

Step 7

To serve, arrange the grilled sweet potato rounds on a plate, top with the grilled chicken breasts, and spoon the pineapple salsa over the chicken. Garnish with extra cilantro if desired.

Step 8

Enjoy this vibrant and nutritious meal!
