Ingredients

  • 1 pound Lean ground turkey (99% fat-free)
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 can (15 oz) Canned black beans, drained and rinsed
  • 1 can (15 oz) Canned kidney beans, drained and rinsed
  • 1 can (15 oz) Canned corn, drained
  • 1 can (14.5 oz) Canned diced tomatoes
  • 1 can (10 oz) Canned diced tomatoes with green chiles (e.g., Rotel)
  • 4 cups Low-sodium chicken broth
  • 1 packet (1 oz) Taco seasoning mix (low-sodium)
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 whole Lime, juiced
  • 2 tablespoons Fresh cilantro, chopped (optional)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat and add the lean ground turkey.

Step 2

Cook the turkey, breaking it apart with a wooden spoon, until browned and fully cooked, about 5-7 minutes.

Step 3

Add the diced onion and minced garlic to the pot with the turkey and cook for 2-3 minutes, or until the onion starts to soften.

Step 4

Stir in the taco seasoning mix, cumin, chili powder, salt, and black pepper, coating the turkey mixture evenly in the spices.

Step 5

Pour in the chicken broth, canned diced tomatoes, canned tomatoes with green chiles, black beans, kidney beans, and corn. Stir well to combine.

Step 6

Bring the soup to a boil, then reduce the heat to low and let it simmer uncovered for 20 minutes, stirring occasionally to prevent sticking.

Step 7

Squeeze in the juice of one lime and stir to enhance the flavor.

Step 8

Taste the soup and adjust seasoning if needed. Serve in bowls and garnish with chopped fresh cilantro if desired.
