Ingredients

  • 1 lb Shrimp (peeled and deveined)
  • 8 oz Snow peas (trimmed)
  • 0.3333 cup Fresh orange juice
  • 2 tbsp Low-sodium soy sauce
  • 1 tbsp Honey
  • 2 tsp Cornstarch
  • 2 cloves Garlic (minced)
  • 1 tsp Ginger (grated)
  • 2 tbsp Vegetable oil
  • 1 tsp Orange zest
  • 0.25 tsp Red pepper flakes (optional)
  • 1 tbsp Sesame seeds (for garnish)

Directions

Step 1

In a small bowl, whisk together the orange juice, soy sauce, honey, cornstarch, and orange zest until smooth. Set this sauce mixture aside.

Step 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Step 3

Add the shrimp to the hot skillet and stir-fry for 2-3 minutes, or until they turn pink and are just cooked through. Remove the shrimp from the skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic, grated ginger, and red pepper flakes (if using) and stir-fry for about 30 seconds, or until fragrant.

Step 5

Add the snow peas to the skillet. Stir-fry for 2-3 minutes, or until the snow peas are bright green and slightly tender but still crisp.

Step 6

Give the orange sauce mixture a quick stir to recombine, then pour it into the skillet. Allow the sauce to come to a simmer, stirring constantly, until it thickens slightly (about 1-2 minutes).

Step 7

Return the cooked shrimp to the skillet and toss everything together until the shrimp and snow peas are evenly coated in the sauce.

Step 8

Remove from heat and transfer the stir-fry to a serving dish. Garnish with sesame seeds, if desired, and serve immediately with steamed rice or noodles.
