  • 4 cups Baby spinach
  • 2 Pink grapefruit
  • 2 tablespoons Olive oil

  • 1 teaspoon Dijon mustard
  • 1 tablespoon White wine vinegar

  • 0.25 teaspoon Black pepper
  • 2 tablespoons Slivered almonds

Directions

Step 1

Wash and pat dry the baby spinach. Place it in a large salad bowl.

Peel the pink grapefruits. Using a sharp knife, segment the grapefruit by carefully cutting out each wedge between the membrane. Work over a bowl to catch any juice.
