Ingredients

  • 4 pieces Whole wheat tortillas
  • 4 cups Fresh spinach leaves
  • 1 cup Feta cheese, crumbled
  • 1 cup Shredded part-skim mozzarella cheese
  • 0.5 cup Red onion, thinly sliced
  • 2 teaspoons Olive oil
  • 2 cloves Garlic, minced
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Heat 1 teaspoon of olive oil in a large non-stick skillet over medium heat.

Step 2

Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.

Step 3

Stir in the fresh spinach leaves and cook, stirring occasionally, until wilted, about 2-3 minutes. Remove the spinach from the skillet and set aside.

Wipe the skillet clean and return to the stove over medium heat.
