  • 0.25 cup Fat-free plain Greek yogurt (optional, for garnish)
  • 2 tablespoons Chopped fresh parsley (optional, for garnish)

Directions

Step 1

Peel and dice the potatoes into small cubes, approximately 1-inch pieces.

Roughly chop the yellow onion. Mince the garlic cloves.

Heat the olive oil in a large soup pot or Dutch oven over medium heat.
