  • 1 can (14 ounces) diced tomatoes, canned with juices
  • 3 cups vegetable broth
  • 2 teaspoons ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 0.5 teaspoons ground turmeric
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.25 cup chopped fresh cilantro (for garnish)
  • 1 whole lemon wedges (for serving)

Directions

Step 1

Heat the olive oil in a skillet over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and sauté for another minute. Transfer to the slow cooker.
