Ingredients

  • 1 piece (about 6 oz) Boneless, skinless chicken breast
  • 1 whole Lemon
  • 1 teaspoon Olive oil
  • 1 piece Garlic clove, minced
  • 0.25 cup Chicken broth (low-sodium)
  • 0.5 teaspoon Italian seasoning
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Fresh parsley, chopped (optional)

Directions

Step 1

Place the chicken breast on a cutting board. If it is uneven in thickness, use a meat mallet to pound it to an even thickness of about 1/2 inch.

Step 2

Season both sides of the chicken breast with salt, black pepper, and Italian seasoning.

Step 3

Cut the lemon in half. Juice one half of the lemon and slice the other half into thin slices. Set aside.

Step 4

Heat a medium skillet over medium heat. Add the olive oil and swirl to coat the pan.

Step 5

Add the chicken breast to the skillet and cook for 4-5 minutes on one side, or until golden brown.

Step 6

Flip the chicken breast and add the minced garlic to the pan. Cook for an additional 4-5 minutes, until the chicken is cooked through (internal temperature should reach 165°F).

Step 7

Remove the chicken from the skillet and set aside on a plate, keeping it warm.

Step 8

Deglaze the skillet by adding the chicken broth and lemon juice. Use a spatula to scrape up any browned bits from the bottom of the pan.

Step 9

Reduce the heat to low and let the sauce simmer for 2-3 minutes, allowing it to slightly thicken.

Step 10

Return the chicken breast to the skillet, topping it with the lemon slices. Spoon the sauce over the chicken to coat well.

Step 11

Cook for an additional 1-2 minutes to ensure the chicken is warm and infused with the sauce flavors.

Step 12

Transfer the chicken to a plate, garnish with chopped parsley if desired, and spoon the remaining lemon sauce over the chicken before serving.
