Ingredients

  • 1 lb Ground turkey (93% lean)
  • 1 tsp Olive oil
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic, minced
  • 1 medium Red bell pepper, diced
  • 1 medium Green bell pepper, diced
  • 2 cups Canned diced tomatoes (no salt added)
  • 1 cup Canned kidney beans, rinsed and drained
  • 1 cup Canned black beans, rinsed and drained
  • 1 cup Low-sodium chicken broth
  • 2 tbsp Chili powder
  • 1 tsp Ground cumin
  • 1 tsp Paprika
  • 1 tsp Dried oregano
  • 0.5 tsp Salt
  • 0.25 tsp Ground black pepper
  • 2 tbsp Fresh cilantro, chopped (optional garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the ground turkey and cook until browned, breaking it up with a wooden spoon as it cooks (about 5-7 minutes).

Step 3

Remove the turkey from the pot and set aside.

Step 4

In the same pot, add the diced onions and cook until softened, about 3-4 minutes.

Step 5

Stir in the minced garlic, red bell pepper, and green bell pepper, and cook for another 3-4 minutes until vegetables are tender.

Step 6

Return the cooked ground turkey to the pot.

Step 7

Add the canned diced tomatoes, kidney beans, black beans, and chicken broth. Stir well to combine.

Step 8

Mix in the chili powder, cumin, paprika, dried oregano, salt, and black pepper.

Step 9

Bring the chili to a boil, then reduce the heat to low and let it simmer uncovered for 25-30 minutes, stirring occasionally to prevent sticking.
