Ingredients

  • 1 cup Plain nonfat Greek yogurt
  • 6 tablespoons Peanut butter powder (such as PB2)
  • 2 tablespoons Honey or maple syrup
  • 3 tablespoons Semi-sweet chocolate chips
  • 1 teaspoon Coconut oil

Directions

Step 1

In a medium mixing bowl, whisk together the Greek yogurt, peanut butter powder, and honey (or maple syrup) until smooth and well combined.

Step 2

Line a mini muffin tin with 12 paper or silicone liners.

Step 3

Divide the peanut butter mixture evenly among the liners, filling each about halfway.

Step 4

In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 15-20 second intervals, stirring in between, until the chocolate is completely melted and smooth.

Step 5

Spoon about 1/2 teaspoon of melted chocolate over the peanut butter mixture in each liner, spreading gently to cover the surface.

Step 6

Place the muffin tin in the freezer and allow the peanut butter cups to freeze for at least 2 hours, or until firm.

Step 7

Once frozen, remove the cups from the liners and store them in an airtight container in the freezer. Let sit at room temperature for 1-2 minutes before eating for best texture.
