  • 15 oz Low-sodium kidney beans, drained and rinsed
  • 1 cup Frozen corn kernels
  • 4 cups Low-sodium chicken or vegetable broth
  • 2 tbsp Taco seasoning mix (low-sodium, no sugar added)
  • 1 tsp Ground cumin
  • 1 tsp Chili powder
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Fresh cilantro, chopped (optional, for garnish)
  • 1 whole Fresh lime wedges (optional, for serving)

Directions

Step 1

In a large soup pot or Dutch oven, heat the pot over medium heat and add the lean ground beef. Cook, breaking up the meat with a wooden spoon, until fully browned (about 5–7 minutes). Drain any excess grease if necessary.
