  • 400 grams Canned diced tomatoes (no salt added)
  • 0.25 cup Low-sodium beef broth
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 8 small Corn tortillas
  • 2 cups Shredded lettuce
  • 1 cup Cherry tomatoes, halved
  • 1 cup Reduced-fat cheddar cheese, shredded
  • 0.25 cup Fresh cilantro, chopped
  • 4 wedges Lime wedges

Directions

Step 1

Heat olive oil in a large non-stick skillet over medium heat.
