Ingredients

  • 1 large (approx. 30cm) Pizza base (wholemeal, thin crust)
  • 150 grams Chicken breast fillet (cooked and shredded)
  • 200 grams Pumpkin (diced into 1cm cubes)
  • 75 grams Low-fat mozzarella cheese (grated)
  • 50 grams Baby spinach leaves
  • 1 spray Olive oil spray
  • 100 ml Tomato passata (sugar-free, salt-reduced)
  • 1 clove Garlic (minced)
  • 1 small Red onion (sliced thinly)
  • 1 teaspoon Dried Italian herbs
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat the oven to 200°C (390°F). Line a baking tray with parchment paper.

Step 2

Place the diced pumpkin on the tray and lightly spray with olive oil. Sprinkle with a pinch of salt and black pepper. Roast in the oven for 15 minutes or until tender and lightly caramelized.

Step 3

While the pumpkin is roasting, prepare the pizza base. Spread the tomato passata evenly across the base, leaving a 1-2cm border around the edges.
