Ingredients

  • 2 cups Cooked shredded chicken breast
  • 1 cup Black beans, rinsed and drained
  • 1 cup Frozen corn kernels
  • 2 cups Reduced-sodium enchilada sauce
  • 6 pieces Low-carb or whole-wheat tortillas
  • 1.5 cups Shredded reduced-fat cheddar cheese
  • 0.5 cup Diced green chilies (optional)
  • 2 tablespoons Chopped fresh cilantro (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Lightly coat a 9x13-inch casserole dish with cooking spray.

Step 3

In a large mixing bowl, combine the shredded chicken, black beans, corn, and diced green chilies (if using). Mix well.

Spread 1/2 cup of enchilada sauce evenly over the bottom of the casserole dish.
