Ingredients

  • 1 lb lean beef stew meat (trimmed of fat)
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, peeled and cut into 1-inch chunks
  • 2 celery stalks, sliced
  • 3 small golden potatoes, cut into 1-inch cubes
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 1 cup frozen peas
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat.

Step 2

Season the beef stew meat with salt and pepper, then sear it in the hot oil until browned on all sides, about 5-6 minutes. Remove the meat from the pot and set aside.

Step 3

Add the diced onion to the pot and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for 1 additional minute until fragrant.

Step 4

Return the browned beef to the pot, along with the carrots, celery, potatoes, and bay leaf.

Step 5

Pour in the beef broth, then stir in the tomato paste, Worcestershire sauce, dried thyme, and dried rosemary. Bring the mixture to a boil.

Step 6

Once boiling, reduce the heat to low, cover the pot, and let the stew simmer gently for 75-80 minutes, or until the beef and vegetables are tender.

Step 7

Stir in the frozen peas during the last 5 minutes of cooking, allowing them to heat through.

Step 8

Remove the bay leaf and taste the stew. Adjust the seasoning with additional salt and pepper if needed.

Step 9

Serve the stew warm with a garnish of fresh parsley, if desired.
