  • 400 grams canned diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 100 grams low-fat shredded cheddar cheese
  • 200 grams low-fat cottage cheese
  • 200 grams whole wheat pasta (cooked and drained)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Heat the olive oil in a large skillet over medium heat. Add the diced onion and garlic, and sauté for 2-3 minutes until fragrant.

Add the lean ground beef to the skillet and cook until browned, breaking it apart with a spoon as it cooks, about 5-6 minutes.

Stir in the diced carrot, zucchini, and bell pepper. Cook for 5 minutes, stirring occasionally, until the vegetables start to soften.
