Ingredients

  • 1 pound Lean ground beef (95% lean)
  • 1 medium Yellow onion, finely chopped
  • 2 cloves Garlic, minced
  • 1.5 tablespoons Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 0.25 teaspoon Crushed red pepper flakes
  • 0.5 teaspoon Salt
  • 1 cup Black beans, drained and rinsed
  • 1 cup Diced tomatoes (no salt added)
  • 1.5 cups Low-sodium tomato sauce
  • 8 Whole wheat tortillas (medium size)
  • 1 cup Reduced-fat shredded cheddar cheese
  • 2 tablespoons Chopped fresh cilantro (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly spray a 9x13-inch baking dish with nonstick cooking spray.

Step 2

In a large skillet, cook the lean ground beef over medium heat until browned, about 5–7 minutes. Drain any excess grease.

Step 3

Add the chopped onion and minced garlic to the skillet with the beef. Cook for another 3–4 minutes until the onion is softened.

Step 4

Stir in the chili powder, cumin, paprika, crushed red pepper flakes, and salt. Cook for 1 minute to allow the spices to bloom.

Step 5

Add the black beans, diced tomatoes, and 1/2 cup of tomato sauce to the skillet. Mix well, and let simmer for 5 minutes to combine flavors. Remove from heat.

Step 6

Spread about 1/2 cup of the remaining tomato sauce evenly across the bottom of the prepared baking dish.

Step 7

Spoon 1/4 cup of the beef and bean mixture onto the center of each tortilla. Roll the tortillas tightly and place them seam-side down in the baking dish.

Step 8

Pour the remaining tomato sauce over the top of the rolled tortillas, ensuring they are evenly covered.

Step 9

Sprinkle the shredded cheddar cheese evenly over the enchiladas.

Step 10

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 11

Remove from the oven and let the enchiladas rest for 5 minutes before serving. Garnish with fresh cilantro if desired.

Step 12

Serve warm and enjoy your delicious WW 8 Points Chili Beef Enchiladas!
