Ingredients

  • 1 lb pork tenderloin
  • 2 tbsp cornstarch
  • 2 tbsp low-sodium soy sauce
  • 1 cup pineapple chunks in juice (no sugar added)
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 2 tbsp white vinegar
  • 3 tbsp ketchup
  • 1.5 tbsp brown sugar (packed)
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 0.25 cup water
  • 2 scallions (optional, for garnish)

Directions

Step 1

Trim any visible fat from the pork tenderloin and cut it into bite-sized cubes.

Step 2

In a bowl, toss the pork cubes with 1 tablespoon of cornstarch and 1 tablespoon of soy sauce. Set aside to marinate for 10 minutes.

Step 3

While the pork is marinating, chop the red bell pepper and green bell pepper into bite-sized pieces, and mince the garlic cloves.

Step 4
