Ingredients

  • 4 whole Apples (medium, firm and sweet like Honeycrisp or Fuji)
  • 0.5 cup Rolled oats
  • 2 tablespoons Brown sugar (packed)
  • 1 teaspoon Cinnamon
  • 0.25 teaspoon Nutmeg
  • 2 tablespoons Chopped walnuts or pecans (optional)
  • 2 tablespoons Raisins or dried cranberries
  • 1 cup Unsweetened apple juice or water
  • 1 as needed Non-stick cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly spray a baking dish with non-stick cooking spray and set aside.

Step 2

Wash the apples thoroughly. Using a sharp knife or an apple corer, carefully core the apples, leaving about 1/2 inch intact at the bottom to hold the filling. Remove any seeds or tough bits inside.

Step 3

In a mixing bowl, combine the rolled oats, brown sugar, cinnamon, nutmeg, chopped nuts (if using), and raisins or dried cranberries. Mix well to combine.

Step 4

Stuff each apple with the oat mixture, pressing it in firmly so it is evenly packed.

Step 5

Place the stuffed apples in the prepared baking dish. Pour the unsweetened apple juice or water into the bottom of the dish to prevent the apples from drying out during baking.

Step 6

Cover the dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake uncovered for another 15 minutes until the apples are tender but not mushy, and the filling is golden.

Step 7

Remove the baking dish from the oven and let the apples cool for a few minutes before serving.

Step 8

Serve warm on their own or with a dollop of fat-free whipped cream or a drizzle of sugar-free caramel sauce, if desired.
