Ingredients

  • 500 grams Baby red potatoes
  • 300 grams Boneless, skinless chicken breast

  • 1 clove Garlic, minced
  • 1 cup Cucumber, diced
  • 1 cup Red bell pepper, diced
  • 2 Scallions, finely sliced
  • 2 tablespoons Fresh cilantro, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Place the baby red potatoes in a large pot of salted water. Bring to a boil over medium-high heat and cook until the potatoes are fork-tender, about 15 minutes. Drain and allow to cool slightly.
