Ingredients

  • 16 oz Boneless, skinless chicken breast
  • 3 tbsp Low-sodium soy sauce
  • 2 tsp Cornstarch
  • 1 tbsp Rice vinegar
  • 1 tbsp Hoisin sauce
  • 3 tbsp Water
  • 1 tsp Sesame oil
  • 2 cloves Garlic, minced
  • 1 tsp Ginger, minced
  • 3 Dried red chili peppers
  • 1 Red bell pepper, diced
  • 1 Zucchini, diced
  • 3 Scallions, chopped
  • 2 tbsp Roasted unsalted peanuts
  • 1 spray Cooking spray

Directions

Step 1

Cut the chicken breast into bite-sized pieces and set aside.

Step 2

In a small bowl, whisk together 2 tablespoons of the soy sauce, cornstarch, rice vinegar, hoisin sauce, and water. This will serve as your sauce. Set aside.

Step 3

Heat a large non-stick skillet or wok over medium-high heat. Spray with cooking spray.
