Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Lime juice
  • 2 cloves Garlic, minced
  • 2 tablespoons Low-sodium soy sauce
  • 1 tablespoon Honey
  • 2 tablespoons Peanut butter (natural, unsweetened)
  • 2 tablespoons Warm water
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Sriracha or red chili sauce (optional)
  • 0.5 teaspoons Cooking spray or olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Fresh cilantro, chopped (optional garnish)

Directions

Step 1

Preheat your grill or stovetop grill pan over medium-high heat. Lightly coat the grill or grill pan with cooking spray or olive oil to prevent sticking.

Step 2

In a small bowl, combine lime juice, minced garlic, soy sauce, and honey. Mix well to create the marinade.

Step 3

Season the chicken breasts with salt and pepper, then brush both sides of the chicken with the prepared marinade, reserving a small amount for basting while cooking.

Step 4

Place the chicken on the hot grill and cook for about 6-7 minutes on each side, or until the chicken is golden brown and the internal temperature reaches 165°F (74°C). Baste the chicken occasionally with the reserved marinade for extra flavor. Once cooked, remove the chicken from the grill and let it rest for 5 minutes.

Step 5

While the chicken is cooking, prepare the peanut dipping sauce. In a small bowl, whisk together the peanut butter, warm water, rice vinegar, and sriracha (if using). Stir until smooth and creamy.

Step 6

Slice the grilled chicken into strips and arrange on a serving plate. Sprinkle with chopped fresh cilantro, if desired.

Step 7

Serve the grilled chicken with the peanut dipping sauce on the side. Enjoy!
