Ingredients

  • 4 pieces Medium russet potatoes
  • 1 as needed Olive oil cooking spray
  • 0.5 teaspoons Ground chipotle chili powder
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.5 cups Reduced-fat shredded cheddar cheese
  • 0.5 cups Plain non-fat Greek yogurt
  • 2 tablespoons Chopped scallions
  • 2 slices Cooked turkey bacon, crumbled

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.

Step 2

Scrub the potatoes clean and pierce each one several times with a fork. Place them directly on the oven rack and bake for 20-25 minutes, or until tender. Remove from the oven and allow them to cool slightly.

Step 3

Once the potatoes are cool enough to handle, slice each one in half lengthwise. Using a spoon, carefully scoop out most of the potato flesh, leaving about 1/4 inch of flesh inside the skin. Save the scooped potato for another use.
