Ingredients

  • 1 medium Green bell pepper, diced
  • 1 medium Zucchini, sliced
  • 1 head Cabbage, chopped
  • 14.5 oz Canned diced tomatoes (no salt added)
  • 6 cups Vegetable broth (low-sodium)
  • 2 tbsp Tomato paste
  • 1 tsp Italian seasoning
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Red pepper flakes (optional)
  • 2 tbsp Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Spray a large soup pot with olive oil spray and heat over medium heat.

Add diced onions and minced garlic to the pot. Sauté for 3-4 minutes until the onions are softened and translucent.
