  • 1 can (14.5 ounces), with juices Diced tomatoes
  • 6 cups Low-sodium vegetable broth
  • 3 minced Garlic cloves
  • 2 teaspoons Italian seasoning
  • 1 teaspoon, or to taste Salt
  • 0.5 teaspoon, or to taste Black pepper
  • 2 cups, fresh Spinach
  • 2 tablespoons, chopped (optional) Fresh parsley

Directions

Step 1

Start by prepping all vegetables: dice carrots, celery, onion, and zucchini; trim and cut green beans; shred cabbage; and mince garlic.

Step 2

In a large soup pot, heat a splash of vegetable broth over medium heat. Add the diced onion, carrots, celery, and garlic. Sauté for about 5 minutes, stirring occasionally, until vegetables begin to soften.
