Ingredients

  • 1 kg Small new potatoes (preferably baby or waxy)
  • 250 g Coarse sea salt
  • 1.5 liters Water

Directions

Step 1

Wash the potatoes thoroughly to remove any dirt, but do not peel them.

Step 2

Place the potatoes in a large pot and add enough water to just cover them (approximately 1.5 liters).

Step 3

Add the coarse sea salt to the pot and bring the water to a boil over high heat.

Step 4

Once boiling, reduce the heat to medium-high and let the potatoes boil uncovered for about 20 minutes, or until they are tender when pierced with a fork.

Step 5

Drain the water from the pot, leaving the potatoes inside.

Step 6

Return the pot to the stove over low heat. Shake the pot gently to evaporate any remaining moisture and allow the salt to create a crust while the potatoes wrinkle. This should take about 5-7 minutes.

Step 7

Remove the pot from the heat and let the potatoes cool slightly before serving.

Step 8
