Ingredients

  • 3 large Carrots
  • 1.5 cups Whole wheat flour
  • 0.5 cups Water
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.5 teaspoons Cumin powder
  • 1 cup Chopped spinach
  • 1 medium Avocado
  • 10 pieces Cherry tomatoes
  • 0.5 cup Feta cheese
  • 0.5 medium Red onion
  • 2 tablespoons Lemon juice

Directions

Step 1

Peel and grate the carrots finely.

Step 2

In a large bowl, mix grated carrots, whole wheat flour, water, olive oil, salt, black pepper, and cumin powder to form a dough. The dough should be pliable but not sticky. If too dry, add a bit more water; if too wet, add a bit more flour.

Step 3

Divide the dough into 8 equal portions and roll each portion into a ball.

Step 4

On a floured surface, roll each ball into a thin circle, approximately 8 inches in diameter.

Heat a non-stick skillet over medium heat. Cook each wrap for about 2 minutes on each side until lightly golden and cooked through. Set aside to cool slightly.
