Ingredients

  • 6 large Eggs
  • 0.33 cup Mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons Fresh chives
  • 0.25 cup Celery
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Lemon juice

Directions

Step 1

Place the eggs in a medium-sized pot and cover them with cold water. There should be about 1 inch of water above the eggs.

Step 2

Bring the pot to a boil over medium-high heat. Once the water reaches a rolling boil, turn off the heat, cover the pot, and let the eggs sit for 10-12 minutes.

Step 3

While the eggs are cooking, finely chop the chives and celery, and set them aside.

Step 4

After the eggs are done, transfer them to a bowl of ice water to cool for about 5 minutes. This will make them easier to peel.

Step 5

Peel the eggs and chop them into small, bite-sized pieces. Place them in a large mixing bowl.

Step 6

Add the mayonnaise, Dijon mustard, chopped chives, celery, salt, black pepper, and lemon juice to the bowl with the eggs.

Step 7

Gently mix everything together until well combined. Taste and adjust seasoning if needed.

Step 8

Serve the egg salad immediately on toasted bread, crackers, or over a bed of fresh greens. Alternatively, refrigerate in an airtight container for up to 3 days for later use.
