  • 8 oz cremini mushrooms, cleaned and sliced
  • 4 oz shiitake mushrooms, cleaned and sliced
  • 4 oz oyster mushrooms, cleaned and torn into bite-sized pieces
  • 1 shallot, finely minced
  • 3 garlic cloves, minced
  • 1 cup dry white wine
  • 1 cup heavy cream
  • 3 oz Parmesan cheese, grated
  • 1 tsp fresh thyme leaves
  • 2 tbsp fresh parsley, chopped

  • 0 to taste black pepper
  • 1 tsp lemon zest

Directions

Step 1

Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Step 2

Heat the olive oil and butter in a large skillet over medium heat until the butter is melted and foamy.

Step 3

Add the cremini, shiitake, and oyster mushrooms to the skillet. Sauté for 6-8 minutes, stirring occasionally, until the mushrooms are golden brown and their liquid has evaporated. Season lightly with salt and pepper.

Step 4

Add the minced shallot and garlic to the skillet with the mushrooms. Cook for 1-2 minutes or until fragrant, being careful not to burn the garlic.
