Ingredients

  • 20 pieces wonton wrappers
  • 200 grams ground chicken or pork
  • 2 tablespoons soy sauce
  • 1 teaspoon ginger, minced
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 piece cucumber, julienned
  • 1 piece carrot, julienned
  • 2 stalks scallions, thinly sliced
  • 2 tablespoons cilantro, chopped
  • 2 tablespoons rice vinegar
  • 1 teaspoon honey
  • 1 teaspoon chili oil
  • 1 tablespoon toasted sesame seeds
  • 1 cup water
  • 1 teaspoon kosher salt

Directions

Step 1

Prepare the filling for the wontons by mixing the ground chicken or pork, 1 tablespoon of soy sauce, minced ginger, and minced garlic in a bowl until well combined.

Step 2

Place a wonton wrapper on a clean surface. Add about 1 teaspoon of filling in the center of the wrapper.

Step 3

Moisten the edges of the wrapper with water and fold it diagonally to form a triangle, pressing the edges to seal. Repeat this process with the remaining wrappers and filling.

Step 4

In a large pot, bring 1 cup of water and 1 teaspoon of salt to a gentle boil. Cook the wontons in batches for 3-4 minutes or until they float to the top. Remove with a slotted spoon and place them in an ice bath to cool. Drain and set aside.

Step 5

In a small bowl, make the dressing by combining the remaining 1 tablespoon of soy sauce, sesame oil, rice vinegar, honey, and chili oil. Whisk until smooth.

Step 6

In a large mixing bowl, combine the julienned cucumber, carrot, scallions, and cilantro.

Step 7

Add the cooled wontons to the salad bowl and pour the dressing over the top. Gently toss to coat everything evenly.

Step 8

Sprinkle the sesame seeds over the salad and serve chilled.
