  • 0.75 cup pearl barley
  • 6 cups vegetable broth
  • 1 whole bay leaf
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons soy sauce
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced yellow onion and sauté for 3-4 minutes until translucent.

Stir in the minced garlic, diced carrots, and diced celery. Cook for another 5 minutes, stirring occasionally, until softened.
