Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 3 garlic cloves, minced
  • 1 pound ground beef
  • 1 medium bell pepper, diced (any color)
  • 28 ounces diced tomatoes (canned, with juice)
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 15 ounces kidney beans, drained and rinsed
  • 15 ounces black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 0.25 teaspoon cayenne pepper (optional, for heat)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0 optional sour cream, for garnish
  • 0 optional shredded cheddar cheese, for garnish
  • 0 optional fresh cilantro, chopped, for garnish

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and sauté until softened, about 4-5 minutes.

Step 3

Stir in the minced garlic and cook for another 1 minute until fragrant.

Step 4

Add the ground beef to the pot. Break it apart with a wooden spoon as it cooks, until browned, about 6-8 minutes. Drain any excess fat if necessary.

Step 5

Stir in the diced bell pepper and cook for 3-4 minutes to soften.

Step 6

Add the chili powder, ground cumin, smoked paprika, oregano, cayenne pepper, salt, and black pepper. Stir to coat the beef and vegetables with the spices.

Step 7

Pour in the canned diced tomatoes (with juice), tomato paste, and beef broth. Stir to combine.

Step 8

Bring the mixture to a simmer and then reduce the heat to low. Cover and cook for 20 minutes, stirring occasionally.

Step 9

Stir in the kidney beans and black beans. Cook uncovered for an additional 10-15 minutes, allowing the chili to thicken slightly.

Step 10

Taste the chili and adjust seasonings if needed. Add more salt, pepper, or spices as desired.

Step 11

Serve hot, garnished with sour cream, shredded cheddar cheese, and fresh cilantro, if desired. Pair with cornbread or tortilla chips for a complete meal!
