Ingredients

  • 10 pieces Wonton wrappers
  • 1 cup Vegetable oil
  • 6 cups Romaine lettuce
  • 2 cups Red cabbage
  • 1 cup Carrots
  • 3 stalks Green onions
  • 1 cup Cooked chicken breast
  • 1 cup Slivered almonds
  • 2 tablespoons Sesame seeds
  • 2 tablespoons Soy sauce
  • 2 tablespoons Rice vinegar
  • 2 tablespoons Honey
  • 1 tablespoon Sesame oil
  • 2 tablespoons Vegetable oil (for dressing)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

Cut the wonton wrappers into thin strips, about 1/4 inch wide.

Step 2

Heat 1 cup of vegetable oil in a large skillet over medium heat. Once hot, fry the wonton strips in batches until golden and crispy, about 1-2 minutes. Remove with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Set aside.

Step 3

Chop the romaine lettuce into bite-sized pieces and thinly slice the red cabbage. Grate the carrots and thinly slice the green onions.

Step 4

Shred or dice the cooked chicken breast into small pieces.

Step 5

In a large salad bowl, combine the lettuce, red cabbage, carrots, green onions, cooked chicken, slivered almonds, and sesame seeds.

Step 6

In a small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, 2 tablespoons of vegetable oil, salt, and black pepper to create the dressing.

Step 7

Pour the dressing over the salad and toss to combine.

Step 8

Just before serving, top the salad with the crispy wonton strips for added crunch. Serve immediately and enjoy!
