Ingredients

  • 500 g Boneless, skinless chicken thighs
  • 3 tbsp Lime juice
  • 2 tbsp Soy sauce
  • 1 tbsp Fish sauce
  • 1 tbsp Brown sugar
  • 1 tbsp Sesame oil
  • 2 pieces Fresh red chilies, thinly sliced
  • 3 pieces Garlic cloves, minced
  • 1 tbsp Ginger, minced
  • 2 pieces Spring onions, sliced
  • 2 tbsp Vegetable oil
  • 2 tbsp Fresh coriander, chopped
  • 4 pieces Fresh lime wedges
  • 1 tbsp Cornstarch
  • 2 tbsp Water

Directions

Step 1

1. Cut the chicken thighs into bite-sized pieces and place them in a bowl. Add 1 tablespoon of lime juice, 1 tablespoon of soy sauce, and the cornstarch. Toss to coat and let marinate for 10 minutes.

Step 2

2. In a small bowl, combine the remaining lime juice, soy sauce, fish sauce, brown sugar, and 2 tablespoons of water. Mix well and set aside.

3. Heat a wok or large frying pan over high heat. Add the vegetable oil and allow it to get hot.

4. Add the marinated chicken to the wok in a single layer. Stir-fry for 4–5 minutes, until the chicken is golden and cooked through. Remove the chicken from the wok and set aside.

5. Add sesame oil to the wok, followed by the garlic, ginger, and sliced chilies. Stir-fry for 30 seconds until fragrant.

6. Return the chicken to the wok and pour in the prepared sauce. Toss everything together to coat the chicken evenly and heat through for 2–3 minutes.

7. Stir in the spring onions and half of the chopped coriander. Remove from heat.

8. Serve immediately, garnished with the remaining coriander and fresh lime wedges on the side. Enjoy with steamed rice or noodles.
