Ingredients

  • 2.5 pounds Yukon Gold potatoes
  • 1 Whole garlic bulb
  • 1 teaspoons Olive oil
  • 4 tablespoons Unsalted butter
  • 0.5 cups Heavy cream
  • 0.75 cups Wisconsin Romano cheese, grated
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the top off the garlic bulb to expose the cloves slightly. Drizzle the olive oil over the exposed cloves, wrap the bulb in aluminum foil, and roast in the oven for 30-35 minutes until the garlic is soft and caramelized. Set aside to cool.

Step 3

Peel and cut the Yukon Gold potatoes into evenly-sized chunks and place them in a large pot. Cover with cold water and add a pinch of salt.
