  • 3 cloves garlic (minced)
  • 6 cups vegetable stock
  • 1 cup unsweetened almond milk (or cream for a richer soup)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons white pepper
  • 1 tablespoon fresh thyme leaves
  • 0 optional croutons or toasted bread for serving

Directions

Step 1

Heat the olive oil in a large soup pot over medium heat.

Add the chopped onion and sauté for 4-5 minutes until soft and translucent.
