Ingredients

  • 2 tablespoons olive oil
  • 1 medium, diced yellow onion
  • 3 minced garlic cloves
  • 3 medium, sliced into rounds carrots
  • 2 medium, sliced into rounds parsnips
  • 2 sliced celery stalks
  • 2 cups, peeled and diced butternut squash
  • 6 cups vegetable stock
  • 3 sprigs fresh thyme
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups, stems removed and chopped kale
  • 1 tablespoon lemon juice

Directions

Step 1

Heat the olive oil in a large soup pot over medium heat.

Step 2

Add the diced onion and sauté for 4-5 minutes, until softened.

Step 3

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Step 4

Add the carrots, parsnips, celery, and butternut squash to the pot. Cook for 5-6 minutes, stirring occasionally.

Step 5

Pour in the vegetable stock, and add the thyme sprigs, bay leaf, salt, and black pepper. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes, or until the vegetables are tender.

Remove the thyme sprigs and bay leaf from the pot and discard.
