  • 1 teaspoon fresh thyme
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 cup heavy cream (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Peel and dice the carrots, parsnips, and sweet potato into 1-inch cubes. Dice the yellow onion and mince the garlic.

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion and garlic, and sauté for 5 minutes until soft and fragrant.
