Ingredients

  • 1.5 cups Arborio rice
  • 3 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 medium Yellow onion (finely chopped)
  • 3 cloves Garlic (minced)
  • 1 teaspoon Red chili flakes
  • 1 teaspoon Smoked paprika
  • 5 cups Vegetable stock (warmed)
  • 0.5 cup Dry white wine
  • 0.75 cup Parmesan cheese (grated)
  • 2 cups Fresh spinach leaves
  • 1 cup Cherry tomatoes (halved)
  • 2 tablespoons Fresh parsley (chopped, for garnish)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Heat the vegetable stock in a pot over low heat and keep it warm throughout the cooking process.

Step 2

In a large pan or skillet, heat the olive oil and 1 tablespoon of butter over medium heat until melted.

Step 3

Add the finely chopped onion to the pan and sauté for 3-4 minutes until softened. Stir in the minced garlic, red chili flakes, and smoked paprika, cooking for another 1-2 minutes until fragrant.

Step 4

Add the Arborio rice to the pan and stir for 2-3 minutes, ensuring the rice is well-coated in the oil and spices.

Step 5

Pour in the dry white wine and stir until it has fully absorbed into the rice.

Step 6

Begin adding the warm vegetable stock one ladle at a time, stirring frequently. Wait until the liquid is almost fully absorbed before adding the next ladle. This process will take about 20-25 minutes.

Step 7

Once the rice is tender and creamy, add the halved cherry tomatoes and fresh spinach leaves. Stir until the spinach wilts and the tomatoes soften slightly, about 2-3 minutes.

Step 8

Remove the pan from the heat and stir in the remaining 1 tablespoon of butter and grated Parmesan cheese. Season with salt and black pepper to taste.

Step 9

Sprinkle the risotto with fresh parsley for garnish before serving.

Step 10

Serve immediately while warm and enjoy the spicy, comforting flavors of this winter risotto!
