Ingredients

  • 500 g ground beef
  • 500 g ground pork
  • 100 g breadcrumbs
  • 120 ml milk
  • 1 medium yellow onion
  • 2 cloves garlic cloves
  • 1 medium carrot
  • 2 large eggs
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 120 ml ketchup
  • 1 tbsp brown sugar
  • 1 tsp Dijon mustard

Directions

Step 1

Preheat the oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.

Step 2

In a small bowl, combine the breadcrumbs and milk. Let the mixture sit for 5 minutes to allow the breadcrumbs to absorb the milk.

Step 3

Peel and finely dice the onion, carrot, and garlic. In a skillet over medium heat, sauté the onion, carrot, and garlic with a small drizzle of oil until they are soft, about 5 minutes. Set aside to cool slightly.

Step 4

In a large mixing bowl, combine the ground beef, ground pork, soaked breadcrumbs, sautéed vegetables, eggs, Worcestershire sauce, thyme, sage, salt, and black pepper. Use your hands or a large spoon to mix everything together gently but thoroughly.

Step 5

Transfer the meatloaf mixture to the prepared loaf pan, pressing it down slightly to create an even surface.

Step 6

In a separate small bowl, whisk together the ketchup, brown sugar, and Dijon mustard. Spread this glaze evenly over the top of the meatloaf.

Step 7

Bake the meatloaf in the preheated oven for 60 minutes, or until a meat thermometer inserted into the center reads 160°F (71°C).

Step 8

Remove the meatloaf from the oven and let it rest in the pan for 10 minutes. Carefully lift it out or slice it directly in the pan. Serve warm, alongside mashed potatoes or roasted vegetables for a cozy winter meal.
