  • 1 cup dried red lentils, rinsed
  • 0.75 cup pearl barley
  • 8 cups vegetable broth
  • 1 14-ounce can diced tomatoes
  • 2 leaves bay leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups baby spinach
  • 1 tablespoon lemon juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the diced onion, carrots, and celery, and sauté for 5–7 minutes until softened.
