  • 0.5 teaspoon ground nutmeg
  • 5 cups vegetable broth
  • 0.5 cup heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 sprigs fresh thyme (for garnish)

Directions

Step 1

In a large pot, melt the butter and olive oil over medium heat.

Step 2

Add the chopped onion and sauté until softened and translucent, about 5 minutes.

Stir in the diced carrots, parsnips, and sweet potato. Cook for another 5-7 minutes, stirring occasionally.
