  • 6 pieces Chicken thighs (bone-in, skinless)
  • 1 teaspoon Salt

  • 2 tablespoons Olive oil
  • 1 large Yellow onion (diced)
  • 4 cloves Garlic (minced)
  • 3 medium Carrots (peeled and chopped)
  • 2 stalks Celery stalks (chopped)
  • 1 cup Dry red wine
  • 2 tablespoons Tomato paste
  • 28 ounces Canned crushed tomatoes
  • 1 cup Chicken broth
  • 1 teaspoon Dried Italian seasoning
  • 1 piece Bay leaf
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Season the chicken thighs with salt and ground black pepper on both sides.

Step 2

Heat olive oil in a large skillet over medium-high heat. Sear the chicken thighs for about 2-3 minutes per side, or until golden brown. Transfer the chicken to the crock pot.

Step 3

In the same skillet, add the diced onions, minced garlic, carrots, and celery. Sauté for 4-5 minutes, or until the vegetables are slightly softened.

Remove the bay leaf and discard. If desired, adjust the seasoning with additional salt and pepper to taste.
