Ingredients

  • 1.5 lbs baby potatoes
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 garlic cloves, minced
  • 0.5 cup dry white wine
  • 0.5 cup chicken or vegetable broth
  • 4 fresh thyme sprigs
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon lemon zest (optional)

Directions

Step 1

Scrub the baby potatoes clean and cut any larger ones in half to ensure even cooking. Leave small ones whole.

Step 2

Heat a large skillet or sauté pan over medium heat and add the olive oil and butter. Allow the butter to melt before adding the minced garlic.

Step 3

Sauté the garlic for 1–2 minutes until fragrant, being careful not to burn it.

Step 4

Add the potatoes to the pan and toss them in the garlic butter mixture to coat evenly.

Step 5

Pour in the white wine and chicken or vegetable broth. Add the fresh thyme sprigs to the pan and season with salt and black pepper.

Step 6

Bring the liquid to a simmer, then lower the heat to medium-low. Cover the pan with a lid and cook for approximately 20 minutes, stirring occasionally, until the potatoes are fork-tender.

Step 7

Remove the lid and increase the heat to medium-high. Allow the liquid to reduce and thicken slightly, tossing the potatoes to evenly coat them in the sauce. This should take 5–7 minutes.

Step 8

Discard the thyme sprigs and transfer the potatoes to a serving dish. Sprinkle with lemon zest for a bright finish, if desired.

Step 9

Serve warm and enjoy!
