  • 500 ml Red or white wine
  • 1 medium Shallot (finely minced)
  • 1 clove Garlic (minced)
  • 30 grams Butter (unsalted)
  • 2 sprigs Fresh thyme (optional)
  • 1 pinch Salt
  • 1 pinch Black pepper (freshly ground)

Directions

Step 1

In a medium saucepan, melt the butter over medium heat until it is frothy but not browned.

Step 2

Add the minced shallot and garlic to the pan, and sauté for 2-3 minutes, or until softened and fragrant.

Step 3

Pour the wine into the saucepan and stir to combine. Add the fresh thyme sprigs if using.

Step 4

Increase the heat to medium-high and bring the mixture to a gentle boil.

Step 5

Reduce the heat to low and let the wine mixture simmer gently for 20-25 minutes, or until the liquid is reduced by at least half and has a syrupy consistency.

Remove the thyme sprigs, if applicable, and season the reduction with a pinch of salt and freshly ground black pepper to taste.
