Ingredients

  • 2 lbs Country-style pork ribs
  • 1 cup Red wine
  • 3 tbsp Olive oil
  • 4 Garlic cloves, minced
  • 2 tbsp Fresh rosemary, chopped
  • 1 tbsp Fresh thyme, chopped
  • 1 tsp Smoked paprika
  • 1 tsp Salt
  • 1 tsp Black pepper, freshly ground
  • 1 medium Onion, sliced
  • 1 cup Chicken stock
  • 2 tbsp Honey

Directions

Step 1

In a medium bowl, whisk together the red wine, olive oil, minced garlic, rosemary, thyme, smoked paprika, salt, and black pepper to create the marinade.

Step 2

Place the country-style pork ribs in a large zip-top bag or a shallow dish. Pour the marinade over the ribs, ensuring they are fully coated. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Step 3

Preheat your oven to 325°F (165°C).

Step 4

In an oven-safe Dutch oven or large skillet, heat 1 tablespoon of olive oil over medium-high heat. Remove the ribs from the marinade (reserving the marinade) and sear them for 2-3 minutes on each side until browned.

Step 5

Remove the ribs from the pot and set them aside. In the same pot, add the sliced onion and sauté for 5 minutes until softened.

Step 6

Pour in the chicken stock and reserved marinade. Stir in the honey and bring the mixture to a simmer.

Step 7

Return the seared ribs to the pot, ensuring they are partially submerged in the liquid. Cover the pot with a lid and transfer it to the preheated oven.

Step 8

Bake for 2.5 to 3 hours, or until the ribs are tender and the meat easily pulls away from the bone.

Step 9

Optional: If you prefer a thicker sauce, remove the ribs from the pot after cooking and reduce the remaining liquid on the stovetop over medium-high heat until it reaches the desired consistency.

Step 10

Serve the wine-marinated country-style ribs hot, garnished with fresh herbs if desired, alongside mashed potatoes, roasted vegetables, or crusty bread to soak up the rich sauce.
