Ingredients

  • 250 ml dry white wine
  • 250 ml whole milk
  • 100 g granulated sugar
  • 6 large egg yolks
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 0.25 tsp ground cinnamon
  • 2 leaves per serving fresh mint leaves (optional, for garnish)

Directions

Step 1

In a medium saucepan, combine the white wine and milk. Set the saucepan over medium heat and gently bring the mixture to a simmer. Do not let it come to a boil.

Step 2

While the milk and wine are heating, whisk the egg yolks, granulated sugar, and cornstarch in a large mixing bowl until the mixture is pale and smooth.

Step 3

Once the milk and wine mixture reaches a simmer, slowly pour about one-third of it into the egg yolk mixture, whisking constantly to temper the eggs and prevent curdling.

Step 4

Gradually pour the tempered egg yolk mixture back into the saucepan with the remaining milk and wine. Stir the custard continuously over medium-low heat with a whisk or wooden spoon.

Step 5

Cook for about 8–10 minutes, until the custard thickens enough to coat the back of a spoon. Be careful not to let the mixture boil, as this could scramble the eggs.

Remove the saucepan from the heat and stir in the vanilla extract, salt, and ground cinnamon.

Pour the wine custard into individual serving dishes or ramekins. Let it cool to room temperature, then refrigerate for at least 2 hours to set.
