  • 0.75 cup pearl barley
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Season the beef stew meat evenly with salt and black pepper.

Step 2

Heat the vegetable oil in a large skillet over medium-high heat. Brown the beef in batches to avoid overcrowding, about 3-4 minutes per side. Transfer the browned beef to the crock pot.

In the same skillet, sauté the diced onion, sliced carrots, and sliced celery for 3-4 minutes, or until softened. Add the minced garlic and cook for an additional 1 minute, stirring frequently.
