Ingredients

  • 1 cup raw almonds
  • 1 cup raw cashews
  • 1 cup raw pecan halves
  • 1 cup raw hazelnuts
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • 1 tablespoon rosemary, finely chopped
  • 1 teaspoon thyme leaves, finely chopped
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the almonds, cashews, pecans, and hazelnuts.

Step 3

Drizzle the olive oil and maple syrup over the nuts and toss to evenly coat.

Step 4

Sprinkle the chopped rosemary, thyme, smoked paprika, cinnamon, kosher salt, black pepper, and cayenne pepper over the nuts. Stir well to evenly distribute the spices.

Step 5

Spread the seasoned nut mixture evenly onto the prepared baking sheet in a single layer.

Step 6

Bake in the preheated oven for 18-20 minutes, stirring once halfway through to ensure even toasting.

Step 7

Remove the baking sheet from the oven and let the nuts cool completely on the sheet. They will crisp up as they cool.

Step 8

Once cooled, transfer the nut mix to an airtight container for storage. Serve at room temperature as a snack or accompaniment to wine.
